Properties: This product is derived from porcine gastric mucosa and appears as an off-white or light yellow powder. It is readily soluble in water, forming varying degrees of milky white solutions, and almost insoluble in alcohol, chloroform, and ether. Its activity is rapidly destroyed when heated to 70°C in aqueous solution or in alkaline solutions, but the dried product can withstand heat up to 100°C. It is hygroscopic and has a slightly acidic and salty taste.
